Green Cabbage has a sweet, grassy flavour with a mustardy finish, known as "cruciferous". When cooked, cabbage can take on the flavour of other ingredients. It is packed with vitamin C and K. Fermented cabbage is a superfood for your gut system.


Use: when sliced thinly, it can be eaten raw, it can be added to soups, stir-fries, and braises. Of course, you can make cabbage rolls with cabbage leaves and borsch (soup). The best type of cabbage for fermentation to make sauerkraut. 

Storage: the best stored whole unsliced until ready to be used. Stored well in a hydrator drawer and it is good advice to refrigerate cabbage to keep it fresher for longer. It can be stored in a plastic bag to help retain moisture but it is not necessary.
